Spanish Tortilla Ingredients: 2 mid size potato (skinned and slice thinly) 1 onion (sliced) 3 eggs (beaten lightly) Salt and pepper to taste Method Stir fry potato and onion on a pan till potato is soft, mash the potato with fork at the pan. Pour in beaten egg (salt pepper added) to the pan, let it cook for 2 mins, then use a plate to turn over the entire portion to cook for another 3 mins. Take out , cut into desire portion and serve. (Ideal for tea, snack and light meal)
Spanish Stew Ingredients: 1/2 lb lamb loins (cut into small chunks) 2 onion (sliced into big chunks) 1 tomato, 1 carrot, 3 potato (cut into chunk cube) one whole garlic (clean and do not peel) Spices:-Saffron, cumin, basil, rosemary, pinch of salt. 1/2 glass of white wine water. Method Stir fry lambs with olive oil till half done, add onion, tomato, carrot. Blend them well, add wine and spices. Put whole garlic at the middle of stew, and let it boil. Once boiled, add water to cover all and let it simmer 30 mins till done. Remove garlic and serve with country bread.
Gustacio (Spanish cold soup) Ingredients (2 serving) 1/2 cup olive oil Chunk of day old country bread ( remove harden skin and soak in water for 5 mins) 1/2 cup red wine vinegar 2 cloves peeled garlic Pinch of cinnamon, salt. 1/2 cup tomato pulp Garnishing: in small cube form Onion, tomato, croutons, spring onion, etc. Method Squeeze excess water from bread and place into a container, add garlic and blend with a portable mixer. Add tomato and blend well, slowly add in olive oil and continue blending till smooth. Add in cumin, salt, vinegar, blend till smooth and soak container in cold water till ready to serve (if not consume instantly). Serve with garnish separately. (Ideal for afternoon snack or light meal on a warm sunny day) |
